Watermelon salad

I can’t really describe this salad, its sweet, refreshing, tangy and salty and great for barbeques or picnics.

Serves 4-6 as a side

400g cubed watermelon,

2 tbsp finely chopped mint

zest and juice of 1 lime

50g crumbled feta cheese (part HEA or 6 syns)

  1. Toss the watermelon and lime zest and juice together.
  2. Lay the watermelon on a platter and scatter the mint and feta over the top and serve.

This is a last minute, chuck together dish that really works well as a side to many different dishes.
