Quick and easy microwave vegetables

I see alot of people buy the little packets of vegetables pre packaged that you chuck in the microwave and if im honest with you.. if you can spend £2 on a handful of vegetables go for it! But when you are feeding a large family or are on a tight budget this is the way to do it!

serves 1 (ive done this for 4 servings before and works well with same method!)

A handful of broccoli florets

1 medium carrot, peeled and sliced a little thinner than your finger

  1. Place your veggies in a heatproof jug and put enough water to come halfway up. (you could add any flavour you want here, some herbs or use some kind of stock or a crushed garlic clove or slices of ginger!)
  2. Place over some clingfilm.
  3. Microwave for 6 minutes. (the cling film will suck in on itself and that is completely fine!
  4. Leave for a couple of minutes then pierce or slice a small hole by the spout. to act as a strainer and pour out all of the liquid. serve!

It’s really that easy!
