Mexican corn salad

I’ve had a lot of requests for side dishes to go along with summer BBQ’s and honestly, I am a sweetcorn lover and I think this side dish goes great with grilled meats!

1 large can sweet corn, drained,

zest and juice half a lime,

1 small red onion finely diced,

1 roasted red pepper (drained and diced),

1 large tomato (halved, scooped out seeds and diced),

small handful finely diced coriander,

25g feta cheese (check your syns here based on your brand)

1/4 tsp cayenne pepper and salt to taste,

  1. Mix together the corn, onion, red pepper and tomato in a bowl.
  2. Whisk the salt and cayenne pepper together with the lime juice and feta in a small bowl and pour over the salad before serving.

This is one of the easiest side dishes you could make and its sweet, tangy with a kick of cayenne, great with your BBQ dishes.
