Pimms fruit salad

Spring is here and summer is well on its way so why not share a delicious fruit salad with friends and family?

300g fresh strawberries, hulled and halved,

2 tbsp finely chopped fresh mint,

2 large peeled and segmented oranges,

1/4 deseeded cucumber in thin slices,

2 apples cored, 1/4 and sliced thinly,

25ml Pimms – or 2 tsp balsamic vinegar.

  1. Add the apples to a bowl of water with lemon slices
  2. the strawberries and oranges to a bowl with the mint and Pimms.
  3. Gently toss to combine and let sit in the fridge until you are ready.
  4. Just before serving gently toss the cucumber and apples into the mix.

If you don’t like Pimms try replacing it with rum to make a mojito fruit salad. If it gets that hot spoon some of the fruit into an ice lolly mould, top with diet lemonade or sparkling water and freeze!
