Portobello mushroom burger

This is something a little different for all vegetarians or the meat lovers It is nice to change things up every once in a while.

Serves 1.

1 large portobello mushroom

1 red roasted red pepper (you can buy them in stores in brine or vinegar, just make sure to rinse it off)

slices of red onion

handful of rocket

1 tbsp goats cheese (syns here)

pinch of garlic granules

bun of your choice

salt, pepper

  1. mix the goat’s cheese, salt, pepper and garlic together and preheat a griddle pan.
  2. Grill the mushroom until lightly charred and juicy (about 5-7 minutes per side).
  3. Spread the goat’s cheese on the bun, place on the rocket, onion slices, the pepper then the onion and top with the bun.

A satisfying burger full of speed veg.
