Chicken Cacciatore

This Italian classic is also called hunters stew as its what you could find out while you are hunting, herbs and mushrooms with your chicken in a rich tomato sauce.

serves 4-6

750g bone in, skinless chicken thighs,

2 onions, 1 red pepper,1 large leek, 2 carrots, 3 cloves of garlic thinly sliced,

250g mixed mushrooms in chunks 1/2 or 1/4s,

2 cans chopped tomatoes + 1 can filled with water,

2 red wine stock cubes,

1/2 tsp dry rosemary and thyme,

1 heaped tsp oregano & 1 bay leaf,

Generous pinch of salt and pepper,

  1. In a frying pan, stir-fry the mushrooms until they brown.
  2. Add them to your slow cooker or instant pot with the rest of the ingredients.
  3. Slow cook on low for 6-8 hours or high for 4 hours or pressure cook on high for 20 minutes.

Serve on its own, with pasta, rice, potatoes or however the heck you want.
