This is a totally simple but easy pasta sauce. There is only 2 syns for the whole batch so you will have to divide that by how many portions you get out of it. (I get around 8 with this batch so I don’t really bother synning this dish!)
1 tsp olive oil
2 tbsp each freshly chopped basil and parsley
2 thinly sliced garlic
1/2 tsp chilli flakes
2 cans chopped tomatoes (or plum but squish them with your hands to break them up, do not blend them as the tomato pips will make the sauce bitter)
2 tbsp tomato puree
generous pinch salt and pepper
- Heat a saucepan with the olive oil, garlic and chilli flakes.
- When you can smell the garlic add in the tinned tomatoes, tomato puree, the herbs and the salt and pepper.
- Stir and let simmer for 5 minutes.
That is it. This spicy pasta sauce is great as it is, with fish or chicken.
