Hawaiian Chicken burger

I watch a lot of travel videos on youtube. mainly because I would one day like to travel and maybe make some videos but also because I’m interested in food around the world.  I saw a few videos from Hawaii including some burgers with grilled chicken, a lightly charred piece of pineapple and salty bacon and let me tell you, It sounds odd but its a match made in weird food heaven!

Serves 2

1 batch of my zesty lime chicken from my chicken in a bag recipe post.

2 rings of pineapple

2 X 60g wholemeal burger buns ( as your HEB or you can use the Aldi brioche buns, 7 syns each but feels very very naughty, or any bun you want)

2 tbsp reduced fat sour cream (1/2 syn each but please double check syns and brands)

1 tbsp chopped, fresh coriander with a pinch of salt and pepper.


Red onion sliced

2 medallions of smoked bacon

  1. Grill the chicken, pineapple and bacon then set aside covered in foil to rest. 
  2. Grill the inside of your buns till lightly golden.
  3. Meanwhile, mix the sour cream, coriander salt and pepper then spread on your buns.
  4. Layer lettuce on the bottom, then the pineapple, onion, chicken then the bacon medallion.

You are set to go. I know cooking fruit is meant to be synned but I’m not stewing it I am literally giving it a little bit of a grill mark. (you can syn this if you want)
