Hash Browns/Rosti

I love full on breakfast, sometimes its worth taking a little free time to make a big batch of these beauties to freeze!

2 large potatoes (should make 6-8)

generous pinch salt & black pepper.

  1. Prick the potatoes all over and microwave for 5 minutes. (releases the natural starch to help form the rosti)
  2. Grate the potatoes into a bowl and mix in the salt and pepper.
  3. Mix together vigorously then shape into patties.
  4. Fry in a pan coated in low-calorie spray until lightly golden on either side.

If you want to freeze the hash browns, lay on a tray and when cool place in the freezer until solid then place in a labelled & dated sandwich bag for up to 6 months.
