Leftover turkey asian wraps

It is very easy to eat the same old leftovers after Christmas! Turkey sandwiches, Turkey curry, cold turkey with salad. This recipe will hopefully inspire you to get experimental with your leftover turkey.

handful of leftover turkey (or chicken)

1 tbsp hoisin sauce (check your syns here)

lettuce leaves to use as wraps

shredded carrot, spring onion and white cabbage

rice noodles cooked, rinsed and cooled.

1 tbsp peanuts roughly chopped (check your syns here)

Sriracha and coriander/cilantro to serve

  1. Toss the chicken in the hoisin sauce and peanuts if you are using.
  2. layout the lettuce leaves on your plate and layer up the chicken, shredded veggies and rice noodles.
  3. Top with some coriander and sriracha.

You won’t be thinking of Christmas when you take a bite of this beautiful and simple dish.
