There is nothing worse than having to slave over something on the hob constantly stirring so what better to have at this time of year than a big batch of rice pudding for the whole family to enjoy?
serves 6-8 (around 5 syns for the whole batch)
1-litre unsweetened almond milk (or another litre of healthy extra option just remember to adjust the syns accordingly)
250g pudding/paella/shortgrain starchy rice
1 tsp vanilla
2 tbsp sweetener or sugar (syn accordingly)
1/4 tsp grated nutmeg
- Add everything to your slow cooker (again using a slow cooker liner is a good idea).
- Stir everything together and cook on low for 2-4 hours.
This would be great on Christmas morning with some fruit piled on top, you could even add some cinnamon and ginger and a handful of sultanas and top with apple and pear chunks. Super christmassy and easy on a busy morning!
