honey roasted parsnips and carrots

Something a little different at Christmas is roasted carrots and parsnips. My nan hates boiled carrots so this is what we always do for everyone and is a must-have on our Christmas menu now! (we do enough for leftovers)

serves 6 people

500g carrots peeled and in thumb size pieces.

500g parsnips peeled and in thumb size pieces.

1 tbsp honey.

1 tsp dry thyme.

salt and pepper.

  1. preheat your oven to 180C.
  2. Preboil your parsnips and carrots for 10 minutes.
  3. Drain your carrots and parsnips and let them steam in the colander until dry.
  4. Place the carrots and parsnips on a lined baking tray and coat them in honey, thyme, salt and pepper and bake for 30 minutes.

The honey adds a slight caramelisation and richness to the vegetables.
