Something a little different at Christmas is roasted carrots and parsnips. My nan hates boiled carrots so this is what we always do for everyone and is a must-have on our Christmas menu now! (we do enough for leftovers)
serves 6 people
500g carrots peeled and in thumb size pieces.
500g parsnips peeled and in thumb size pieces.
1 tbsp honey.
1 tsp dry thyme.
salt and pepper.
- preheat your oven to 180C.
- Preboil your parsnips and carrots for 10 minutes.
- Drain your carrots and parsnips and let them steam in the colander until dry.
- Place the carrots and parsnips on a lined baking tray and coat them in honey, thyme, salt and pepper and bake for 30 minutes.
The honey adds a slight caramelisation and richness to the vegetables.
