Slow cooker: sweet chilli chicken and rice

Have I mentioned that I love my slow cooker and slow cooker liners? This may seem odd doing everything in one pot but it works a treat!

serves 6 people (I have a large family but this does well for lunch the next day – 1 syn each)

4 large chicken breasts cut into bitesize pieces

1/2 tsp bicarbonate soda

1 tbsp cornflour

2 tbsp soy sauce and water

2 tbsp sweet chilli sauce (mine is 2 syns per tbsp so check your brand before deciding on final syn value)

1 tsp grated ginger and 1/2 sesame oil (1 syn)

1 large onion, red and green pepper in rough chunks

3 spring onions finely chopped and coriander to serve

2 cups basmati rice & 2.5 cups water

(I like to serve this with my garlic greens which are already uploaded under sides)

  1. Turn the slow cooker to high.
  2. In one chicken roasting bag add the rice and water and seal the top loosely near the top of the bag so the rice has enough room to expand and place it in your slow cooker.
  3. Mix the chicken with everything but the coriander and spring onion inside another chicken roasting bag, seal and place next to your rice in the slow cooker.
  4. Leave to cook for 3 hours on high.

Thats it! How easy is that?  Don’t say i don’t treat you!
