Slow cooker: chicken parmesan

There are a couple of ways we can go around chicken parmesan but this is by far the easiest way to enjoy a delicious weeknight meal that the whole family will love.

serves 4-6 (around 1.5 syns each or can be lower or free if you include your HEA)

1 onion, carrot and courgette (you can use a food processor or chunk however you want)

4 chicken breasts

2xpassata

1 grated garlic clove

1tsp each dry oregano and basil

70g reduced fat mozzarella

generous pinch salt and pepper.

  1. Put everything but the chicken breast in the slow cooker.
  2. Stir and place in the chicken breast and leave to cook on high for 4 hours or low 6-8 hours.
  3. Shred the chicken in the pot (or you can remove and chop – at this point you could stir in 500g cooked pasta).
  4. Top with the mozzarella, recover until melted then serve.

I like to serve mine with salad, broccoli or green beans.
