There are a couple of ways we can go around chicken parmesan but this is by far the easiest way to enjoy a delicious weeknight meal that the whole family will love.
serves 4-6 (around 1.5 syns each or can be lower or free if you include your HEA)
1 onion, carrot and courgette (you can use a food processor or chunk however you want)
4 chicken breasts
1 grated garlic clove
1tsp each dry oregano and basil
70g reduced fat mozzarella
generous pinch salt and pepper.
- Put everything but the chicken breast in the slow cooker.
- Stir and place in the chicken breast and leave to cook on high for 4 hours or low 6-8 hours.
- Shred the chicken in the pot (or you can remove and chop – at this point you could stir in 500g cooked pasta).
- Top with the mozzarella, recover until melted then serve.
I like to serve mine with salad, broccoli or green beans.
