Pomodoro sauce


A beautiful, fresh tomato sauce that is very popular in high street Italian restaurants!

500g fresh tomatoes

25g fresh basil, cleaned

1 small onion (finely diced or grated)

1 large clove garlic (grated)

1 tsp sweetener

1/4 tsp salt and black pepper

1 tbsp tomato puree

  1. Cut your tomatoes in half, deseed them and then grate the pulp into a bowl, alternatively use 1 jar of passata but leave out the tomato puree.
  2. (I like to use 1 tsp olive oil for 2 syns but that’s optional) using low-calorie spray fry off the onion until it is completely softened then add your garlic, salt and pepper and stir-fry until you can smell the garlic.
  3. Add the grated tomatoes or passata and the basil and stir and let simmer for 20 minutes. (at that point you want to add your tomato puree and let simmer for another 15-20 minutes making sure to stir every so often)

Restaurants such as Prezzo use this as all of their tomato-based pasta sauces including their pizzas. There really is nothing quite like this sauce it goes well with fish, poultry, meat and grilled vegetables, through pasta or on its own as a sauce.
