This is my take on a classic dish I make at every gathering we have. I usually use those bags of frozen mini sausages for my family, you could always use slimming world sausages if you don’t want to make the sausage meatballs but I prefer the flavour for these!
The only syns you should have to count is the honey and mustard.
500g extra lean pork mince
1.5 tsp dry sage
generous pinch salt and black pepper
2 tbsp water, whole grain mustard and honey
sauce: 2tbsp water, whole grain mustard and honey, 1 tsp English mustard
1 tsp bicarb
- Mix the pork mince, sage, salt, pepper, bicarb and water very well then make into meatballs, ideally use a tsp scoop and roll them into balls.
- Fry the pork sausage bites in a pan over high heat until they are lightly browned.
- Meanwhile mix the honey, mustard and water together.
- Turn the heat down on the pan and add the sauce and stir carefully until the sauce coats the sausage bites.
Serve warm or if taking on a picnic leave to cool completely before storing in the fridge for up to 4 days. You can reheat once if need be.
