You must be reading the title of this post with your head tilted to one side. Today we a re making a Cuickle! A quick cucumber pickle delicious on salads but must be eaten the same day.
Mum has basically made our polytunnel a cucumber birthing ground.. We have too many! So I’m trying to eat the humble cucumber in as many different ways as I can’t just keep eating the stuff straight from the garden!
Distilled white vinegar
whole cucumber sliced or cubed however you want.
- Put the cucumber in a bowl with a generous pinch of salt (tbsp or so) and a pinch of dried or fresh dill and cover with water.
- Let sit for 5 minutes before draining and rinsing.
- After draining add a little more dill and ass a sprinkle of vinegar and taste and add more if you want a tangier cuickle.
This is delicious on salad, on their own, at a BBQ, on a burger you should totally try it.
