Inspired by tom kerridges dopamine diet book which is choca block full of delicious recipes!
1 tbsp butter and double cream
2 rashers bacon
1 medium tomato
1. Fry the bacon until crisp and move to a bowl with the tomato, cheese and rocket, add a pinch of salt and pepper and combine.
2. Add the butter to the pan over a medium low heat.
3. Whisk the eggs with the cream and a pinch of salt and pepper then add to the pan moving the egg mix lightly for 2-4 minutes.
4. Cover with a lid for a minute, add your bacon cheese mix and fold over the omelette, cover with a lid and leave for 2-3 minutes before serving.
Super easy and quick for this hot weather. If following slimming world use bacon medallions and replace the butter with low calorie spray, you don’t have to use the cheese but it’s cheese so why wouldn’t you?
