This is slightly different from your average keto salad and is utterly moreish. You can use beef or lamb mince.
2 cups shredded or mixed lettuce
50g mince (preferably beef or mince)
1 small-medium tomato (around 1/4 cup chopped)
1 large spring onion finely sliced
1/8 cup crushed tortilla crisps
1/4 cup shredded cheddar
1tsp each garlic granules, cumin and smoked paprika
(I sometimes use my lime and coriander dip as a dressing on this salad and it works so well https://chefwhoslims.com/2017/06/13/coriander-lime/)
- Fry the beef with the spices and a pinch of salt and pepper.
- Lay the salad on a plate with the tomatoes, spring onion and cheddar sprinkled over the top.
- Lay the mince on top of the salad. (i like getting the mince slightly crispy)
- Sprinkle over the tortilla crisps.
