Taco salad

This is slightly different from your average keto salad and is utterly moreish. You can use beef or lamb mince.

2 cups shredded or mixed lettuce

50g mince (preferably beef or mince)

1 small-medium tomato (around 1/4 cup chopped)

1 large spring onion finely sliced

1/8 cup crushed tortilla crisps

1/4 cup shredded cheddar

1tsp each garlic granules, cumin and smoked paprika

(I sometimes use my lime and coriander dip as a dressing on this salad and it works so well https://chefwhoslims.com/2017/06/13/coriander-lime/)

  1. Fry the beef with the spices and a pinch of salt and pepper.
  2. Lay the salad on a plate with the tomatoes, spring onion and cheddar sprinkled over the top.
  3. Lay the mince on top of the salad. (i like getting the mince slightly crispy)
  4. Sprinkle over the tortilla crisps.

394 calories, 38.2g fat, 8.9g carbs, 20.7g protein 

This salad really hits the spot and for 8.9g carbs is really worth it! I hope you give this a try!
