Keto chilli stew/soup

I love a good chilli con carne, I used to have mine piled on rice with wraps but now I have cauliflower rice or served over broccoli! There’s nothing quite like the fragrance of a good chilli!

Serves 4-6

500g beef mince

1 tbsp butter

1 tbsp cumin and ground coriander

1heaped tsp garlic granules and smoked paprika

1/2 tsp cinnamon, Himalayan salt and black pepper

1 red chilli (with or without seeds)

1 green and red pepper and 1 white onion (very few carbs)

2 tins of tomatoes

400ml beef stock

1. Fry the mince until starting to crisp add the butter then add your peppers and onions and cook until they start to soften.

2.Add the herbs and spices and stir fry for 3-5 minutes.

3. Add the tomatoes and stock and simmer for 20 minutes.

I serve with sour cream and coriander over the top. If you want it to be a thick chilli don’t add all the water but make sure you stir when simmering.
