Keto curd

The basic of the curd is to use any zest and juice you want.

Zest and juice of 1 lemon or 2 limes

4 tbsp xylitol or similar granulated natural sweetener

2 eggs

4 tbsp butter

1. Whisk everything together.

2. Place the bowl over a pan of simmering water and carry on whisking.

3. When the eggs are thick (takes 5-10 minutes)

4. Remove from the heat and whisk in the butter a chunk at a time until smooth, thick and creamy.

This will keep in the fridge for 2 weeks in a jar.
