Easy to make and easier to eat!
Makes 6-8 decent sized fish cakes.
1/2 lime zest and juice
2 large fillets of white fish
1 Spring Onion
1/2 tsp salt and black pepper
2 tbsp olive oil
1 tbsp coconut flour
1 tsp baking powder
1. Blend in a food processor then stir in the coconut flour.
2. Shape into patties and fry till crisp on either side.
3. Keep the fishcakes warm in the oven while you fry the rest of the fishcakes so you don’t overcrowd the pan.
Delicious served with lime wedges and salad.
