You don’t have to use the chorizo here but it really adds to the flavour, I also like adding peppers and onions too sometimes and the flavours just blend so beautifully!
4 chicken breasts (in bite size chunks)
1 tbsp tomato purée
4 tbsp tomato purée
1 heaped tsp smoked paprika
1/2 tsp bicarbonate soda
1 grated garlic clove
Salt and pepper
20g of chorizo per skewer (around 2 syns depending what brand)
1. Mix together the water, tomato purée, garlic, paprika, salt, pepper and bicarbonate soda and coat the chicken in the marinade.
2. Mean while Soak the skewers in warm water.
3. Alternate the chicken (peppers and onions if using) and chorizo.
These are delicious grilledtill slightly crisp especially on the BBQ! Just make sure to put them in a 150 degree oven for at least 5 minutes so they are piping hot!
