This is a quick and easy lunch that lasts up to 4 days in the fridge, not only is it lighter than you would expect but it is full of flavour!
(Please double check your syns*)
1 cooked chicken breast
4 medallions of smoked bacon (dived and cooked to your liking, I prefer crisp)
200g pasta (boiled to packet instruction then cooled under ice water and drained thoroughly)
2 tbsp light mayonnaise*
4 tbsp 0% fat Greek yogurt
1 tbsp fresh dill, parsley and chives (or 2 tsp of dried each)
1/2 tsp granulated garlic salt and pepper
1 small can sweet corn.
– combine all the ingredients together and leave to sit covered for st least 20 minutes.
I served mine with a hard boiled egg on a bed of mixed salad.
