This is similar to Jamie Oliver’s beef stroganoff as we love that recipe.
2 red onions
4 chicken thighs or 2 chicken breasts (thinly sliced)
2 garlic cloves
100g sliced gherkins
200g chestnut mushrooms (chopped his you like)
2 tsp paprika
Salt and pepper
200ml chicken stock with 1 tbsp cornflour*
2 tbsp Low Fat yogurt
1.Fry the mushrooms until coloured and brown, remove to a plate.
2. Coat the chicken in the paprika and zest of the lemon.
3. Add the chicken to the pan and seat then add the onions, garlic, gherkins and go back in with the mushrooms and a generous pinch of salt and pepper.
4. Tossand stir then add in the stock and simmer until thickened.
5. Remove from the heat and stir through the yogurt.
(I served mine with pasta and lemon wedges on the side)
*the cornflour is 1tbsp to 1 syn but please double check!
