So I have a winter minestrone but not a normal minestrone, this minestrone is vegetarian friendly and so comforting!

Serves 1-2

1 red pepper, onion, large carrot (chopped however you want)

1 garlic clove grated

200g broccoli or cabbage

100g green beans

100g pasta

2 tbsp tomato purée

400ml water/veg stock

1 tsp smoked paprika, dried oregano and basil

Salt and pepper to taste

1.fry the onion, carrots and peppers until they start to soften. 

2. Add the garlic and herbs along with the tomato purée, cook for 3 minutes.

3. Add all of the liquid ingredients and bring to a boil.

4. Add a good pinch of salt and pepper along with the rest of the veg and pasta.

5. When the pasta is cooked taste again for seasoning before you serve. 

This is great with a time of mixed beans for a bit of protein and cooks in no time, easy to double and triple and lasts in the fridge for 5 days!
