I love this recipe, it’s fresh and full of flavour, the crispy salty bacon goes beautiful with the pasta and bruschetta style dressing!
2 bacon medallions (finely slice)
2 large tomatoes (diced)
1/2 small red onion (finely diced)
1/2 romaine lettuce (rough chopped)
1 tbsp balsamic
2 tbsp finely chopped basil
1/2 tsp dr oregano
Salt and pepper
1. Boil the pasta then drain and rinse with cold water.
2. Meanwhile Crisp the bacon in a pan then leave to cool.
3. Mix all the herbs with the tomatoes, onions, balsamic and a pinch of salt and pepper.
4. Layer the lettuce with the pasta and tomatoes then sprinkle over the bacon.
This salad is fresh and delicious and hearty.
