One pot pasta primavera

This is a really fresh, light and easy lunch or dinner that is vegetarian friendly and made in one pot using whatever fresh or on offer veggies you can get your hands on!

Serves 4 at 2.5 syns each*

200g each pasta and mixed green veggies. (I used green beans, broccoli and peas)

50 g shredded basil

1 tsp olive oil *2 syns & dried basil

4 tbsp grated Parmesan *4 syns

1 clove garlic & zest half a lemon

1 veggie stock cube 

1. Smash the  garlic clove and add to the pot with the lemon zest and olive oil heat over a low heat until the garlic is fragrant.

2. Add the pasta, dry basil and stock cube and top with just enough water to cover the pasta and simmer for 5 minutes.

3. Add the veggies and simmer for another 5 minutes.

4. Season with salt and pepper and stir through the Parmesan and basil.

*please check your syns, only 1/2 syn a portion if you use parmesanas part HEA
