These are super easy to make! Personally I like using the 10% beef mince as really you need that little bit of fat but it’s up to you which mince you use!
500g beef mince
1 large onion and garlic clove (finely chopped)
2 tsp Italian herbs
Generous pinch of salt and pepper
Splash of Worcestershire sauce (about a tsp)
1. Fry the onion and garlic until soft, add the salt and pepper and the Italian herbs(the heat helps to wake them up a little – if you can’t find Italian herbs it’s usually an squeak blend of dried basil, oregano, thyme, parsley and rosemary, so if you have any of those on hand add a few pinches of each)
2. Season the meat with salt and pepper. (You want your meat to be room temperature not straight out the fridge), add the onion and get your hands in there mixing really really well. (My secret is adding 3 -4 tbsp water as the mince will just absorb it!!)
3. Use a tablespoon measure to divide the meat then shape into balls.
4. Fry the meatballs over a high heat, trying not to touch them too much.
After they are seated all over you can either put them into your sauce or leave to cool and freeze in a freezer bag so all you have to do is pull a few out and chuck them in your sauce till heated through!
