One pot pepper pasta

This is quick, easy, vegetarian friendly, but if you’re an avid meat eater this would go lovely with some grilled fish or chicken! 

100g pasta (roughly 2 handfuls)

Tsp thyme & 1 stock cube of choice

Handful parsley and basil 

1 large chopped onion and garlic clove

1 tbsp tomato purée

25g Reduced Fat feta (2 syns or part of HEA)

3 jarred roasted red peppers(Lidl and also only around a pound for a jar of usually 7-8 in one jar)

1. Fry the onion, garlic and thyme until soft.

2. Add the peppers and stir breaking them up with your spoon (alternatively you could use a hand blender to make it smoother)

3. Add  the pasta, stick cube and enough water to cover, add a generous pinch of salt and pepper, give it a good stir, cover and leave for 15 minutes stirring every so often.

4. Stir through half the feta and the herbs and serve sprinkled with the rest of the feta.

(Please double check the syns for your feta if you follow Sw)

This is a dish that’s easy to multiply, if making for 4-6 people just use the whole jar of peppers and around 500g pasta.
