green goddess pasta

This may sound odd but it’s an easy pasta with a nice lot of green veggies in and full of flavour.

70g pasta

4 bundles frozen chopped spinach or kale

Handful broccoli (rough chunks) 

Half small chicken breast (small chunks) 

1 onion(fine chop)

Handful chopped green beans 

1 large tomato ( 2cm chunks) 

1 tsp grated garlic and dry basil

3 tbsp fresh chopped basil and Parmesan (3syns)

1. Fry the onion until soft and add the chicken and sear.

2. Add the garlic and when fragrant add the rest of the ingredients except the Parmesan and just cover the pasta with water.

3. Simmer until the pasta is tender and stir through the Parmesan. 

4. Taste and add any seasoning that is needed.

I topped mine with some rocket but you could simply serve as is.
