This was my first live video over on Facebook, it takes minutes to do! If you don’t have a gas job just grill the peppers in the oven on high so the outsides char a little. I added onion to mine but you don’t need to!
Serves 2-4 only 2 syns
1 tsp olive oil
1tbsp tomato purée
Juice half a lemon
Tsp dried basil
1 veggie stock
2 red peppers
Salt and pepper
Half bag of rocket
1 mug of cous cous
1. Get the kettle on, while it’s boiling mix the cous cous, basil and tomato purée.
2. Add your hot water and cover, meanwhile grill your peppers and chop into bite size pieces.
3. Fluff the cous cous with a fork add the olive oil and lemon juice and salt and pepper.
4. Stir through the rocket and pepper taste and add salt and pepper.
I served mine with 2 syns worth of feta, extra salad and grilled chicken!
