Pizza Potato

You are probably reading the title of this recipe thinking what the heck? It sounds odd but really works well and is utterly delicious and you can add whatever toppings you like!

1 large Jacket style potato

1 tin of tomatoes

1 tsp oregano/Italian herbs, salt and pepper

25 g low-fat mozzarella (2 syns)

Any toppings you like (i like onion, peppers and ham or chicken or synning some salami/pepperoni!)

  1. prick the potato all over and microwave for 10 minutes. (you should be able to easily put a fork or knife into the potato)
  2. smash the microwaved potato between 2 plates do it flattens out and fry it in a frying pan until nice and crisp on either side.
  3. mix the salt, pepper and mixed herbs with the tomatoes and top the potato with the sauce, your chosen toppings and the cheese.
  4. grill until the cheese has melted, then serve with a lovely big salad.

To me, this is the ultimate alternative to a high syn pizza only at 2 syns unless you use the cheese for your healthy extra a.
