Chicken pizza

I recently had some followers ask for some SP friendly meals, I recently shared my singing swede. This chicken pizza is delicious with salad, not to mention low in syn.

This serves 1 at 2 syns

1 large chicken breast

1 tsp grated garlic and oregano

salt and pepper

1 red onion, finely diced

1 tin chopped tomatoes

25g reduced fat mozzarella  (2 syns or use cheese from your HEA allowance for it to be free)

salt and pepper

  1. season the chicken breast with salt and pepper.
  2. Heat a pan over high heat and sear the chicken breast so it is coloured and crisp all over to sear it, put on a plate to the side.
  3. In the same pan add in the onion and stir fry for 3-5 minutes.
  4. Add in the garlic, herbs and a generous pinch of salt and pepper and stir until fragrant.
  5. Add the tomatoes, stir through the onion mix then add the chicken back in, cover with a lid and simmer for 10 minutes.
  6. Add the mozzarella and put under the grill or recover until the mozzarella is melted.

A quick 20 minute meal that is low in syn, high in flavour and suitable for SP day!
