Seasonings

These are some of my most basic seasonings that I love to use for various dishes from chilli or taco style food to Italian dishes and Spanish dishes. I like making my seasonings from scratch so tIat I know what is in them and to know they are syn free for slimming world is a bonus!

Italian seasoning: 1 tbsp dried basil, dried sage, dried thyme and 1 tsp dry rosemary. (you can make this in a batch and keep in a jar, it is brilliant used on chicken, in soups, I love using it in pork mince when I make scotch eggs and even in a bolognese!

Cajun seasoning: (can also be used in place for creole seasoning too): 2 tbsp sweet paprika, 1 tbsp smoked paprika, garlic granules, onion granules, celery salt, dried oregano, dried thyme, dried basil, black pepper and 1 tsp cayenne pepper. (again stored in a jar in a cool dry place) This seasoning is good on everything from fish to chicken and rice dishes, I love using this in my jambalaya dish which you can find on my blog!

Fajita: 1tbsp each cumin, smoked paprika and garlic granules. (if you like a spicy fajita add 1 tsp cayenne!) I use this in my chicken or beef fajita (i prefer my beef fajita spicier!)

Balti spice blend: 1 heaped tsp garam masala, 1tsp chilli flakes, cumin, ground coriander, 1/2 tsp cinnamon, 2 bay leaves, 1/4 tsp ground cardamom or 6 cardamom pods, 1 tsp ground fenugreek. (you would also need 2 large cloves of garlic and 1 heaped tsp grated ginger)

Chilli blend: 1 tsp chilli flakes, 1tbsp ground cumin, ground coriander, smoked paprika, garlic and onion granules and oregano, 1/2 tsp cinnamon.

These are just some of the seasonings that I love to use, but they are my most used and loved seasonings. They are all store cupboard friendly obviously up until the dates on the spices are out! If you are wondering why I don’t add salt or pepper to my seasonings it is because I always season as I go along and usually depends on if I am cooking for my younger sisters as small children can’t have a lot of salt in their diet!
