This may seem really simple but honestly, on slimming-world, you can’t go adding lashings of butter and milk! Mash doesn’t have to be bland and I am going to give you a basic recipe for different ways to mash it up!! (pardon the pun)
Serves 4-6 people
800g peeled and roughly chopped potatoes (as long as the potatoes aren’t waxy it doesn’t matter what potatoes you are using)
2 tsp mustard powder (i sometimes like using a tablespoon of wholegrain mustard but it has syns so double check)
200ml of water (i usually use the water from the potatoes)
2 tsp salt and a generous pinch of black pepper.
- Boil the potatoes with the salt until they are falling apart.
- Mix together the water with the pepper and mustard and add to the pan with the potatoes.
- This is the step that can go different ways: Just use a normal masher, use a potato ricer or an immersion blender until only just lump free. Make sure you fully incorporate the mustard water before serving.
If you are making mash to top something like shepherds pie it usually helps to add a couple of eggs to help enrichen the mash and help it colour.
