Broccoli and Stilton soup

This makes a hefty 8-10portions at 2.5 (2 if for 10 people)syns each. Delicious and creamy and my ultimate soup leading up to Christmas!

1 large head of broccoli (chopped up including stalk)

1 white onion and 2 large leeks( roughly chopped)

2 large potatoes or 4 small (rough chop)

3 litres of vegetable stock

100g Stilton (I used the Aldi stuff as it’s potent and a good price, just wrap tightly in cling film in the fridge until next use)

1. In a large soup pot fry the onion and leek until softened with a generous pinch of black pepper, (leave salt until you have added the Stilton)

2. Add the potatoes, broccoli no stock and cook until the potatoes are soft.

3. Blend until there are no large lumps and add in the Stilton and stir until it is melted into the soup.

4. Taste and season with salt and more black pepper and serve or keep in the fridge (once cooled) for up to 4 days.
