Anyone who hasn’t tried tofu before because of the bad reputation it has then look no further than the next 2 recipes I’m sharing! This is my easy tofu soup. Umami and soothing you can’t go wrong! And the good thing? You can now get all of these ingredients in your local supermarkets! (Serves 1)
1/2 packet tofu (remove from the packet and place between 2 wads of kitchen roll with a weight on top)
1 tbsp soy sauce
1 tbsp miso paste
1/2 tsp sesame oil, grated Ginger and garlic
1 portion rice noodles (soaked for 10 minutes then drained)
Shredded carrot and green onion to finish.
1. In a small bowl add the tofu and slice into cubes before pouring over the soy sauce, ginger and garlic and gently turn to coat.
2. In a soup pot whisk the water and miso together until smooth and almost simmering.
3. Add the rice noodles to a serving bowl and add the tofu to the miso broth, leave to warm through for 1-2 minutes.
4. Pour the broth and tofu over the noodles and top with the carrot and Spring Onion.
