Easy, tasty, syn free and works with everything from chips to chicken or as a salad dressing!

2 large tomatoes

1/2 red and green pepper (finely diced)

half a red onion (finely diced or 2 sliced spring onion)

handful of roughly chopped coriander

splash white wine vinegar

pinch salt and pepper

pinch granulated garlic

  1. slice one of the tomatoes in half and grate into a bowl.
  2. finely dice the other tomato and mix into the grated tomato.
  3. Mix in the rest of the ingredients and let sit for 20 minutes before using or serving.

I hope you guys like this fresh and zingy salsa. If you want one more like the shop bought one cook the onion and pepper and add a tin of chopped tomatoes with a generous pinch of salt and pepper. cook for 10 minutes then leave to cool, add the garlic, coriander and the vinegar.
