Bubble and squeak 

I had a follower recently ask me if I could share more vegetarian recipes and I couldn’t believe I haven’t posted this yet! It doesn’t look appealing but is brilliant for leftover veggies, potatoes or mash that need using!

Serves 4-6

4 large potatoes sliced with skin on, 1small swede small chunks

Half head broccoli in small florets

2 small leeks

1/4 small cabbage

2 large chopped carrots

1. Boil the cabbage, potatoes, swede, carrots and broccoli until falling apart and drain well.

2. In a large pan fry the leeks.

3. Meanwhile mash the boiled veggies and add to the leeks with a generous pinch of salt and pepper.

4. Fry until it starts to crisp and rotate and flip and stir and repeat 4-5 times (about 15 minutes in total)

I usually serve with beans, mushroom and sausages but you can use quorn sausages. Very comforting.
