Mac and cheese (with broccoli)

This is my slimming world friendly version for Mac and cheese with the addition of broccoli which works a dream with the sauce!

Serves 2 as a main or 4 as a side

200g macaroni/pasta

150g broccoli in small florets

25g lifetime zero fat cheddar (2syns)

2 tbsp grated Parmesan (2 syns)

1 tsp mustard powder and pinch of garlic granules

1 small pot low fat cottage cheese.

Handful roughly chopped parsley.

Salt and pepper

1. Cook the broccoli and pasta together according to packet instruction.

2. Meanwhile blend all the cheeses with the parsley, mustard powder , garlic and a generous pinch of salt and plenty of black pepper. 

3. Drain the pasta and add the sauce, stirring and cooking on low heat for 5-10 minutes until the sauce melts and coats the pasta.

Bare in mind this is my slimming world version and is only 2 syns as a main meal or 1 as a side between 4! If you can’t get hold of the cheese mentioned just replace the cheddar with 2 more tbsp of Parmesan!
