Leek and ham pasta

Creamy, slightly smokey, comforting, easy on budget and easy to make.

Serves 2-4 as main meal or 4-6 as side!

2 large leeks (thinly sliced)

4 rashers smoked bacon (finely diced)

500g small cut pasta (such as the mini shells or orzo)

4 tbsp grated Parmesan(1syn per tbsp)

1 cup frozen peas

300ml milk and 300ml water

Salt and pepper to taste 

1 tsp mustard

1. Fry the bacon until it starts to crisp up.

2. Add the onion and leeks and a generous sprinkle of salt and pepper, cook for 10 minutes occasionally stirring.

3. Add in the pasta, mustard, milk and water and cook, stirring occasionally until the liquid is nearly absorbed.

4. Add in the peas and cheese and stir thoroughly for a couple of minutes.
