I have had a lot of fuss over this picture I posted from friends and complete strangers, I’m planning to do a recipe video but I thought I’d share the recipe now! Creamy ranch style dressing with soft chicken and crispy bacon, what dreams are made of!
4smoked bacon rashers (finely diced and fried till crisp)
1 large cooked chicken breast in bitesized chunks
3 finely diced spring onions
1tbsp each of freshly chopped parsley, dill, chives, light mayo (check for syns)
2 tbsp zero fat Greek yogurt
2tbsp skim milk(syn check here too)
Generous pinch of salt, pepper and garlic
1. Boil the pasta until al dente (1-2 minutes less than the packet says) and cool under cold water.
2. In a bowl mix the milk, Mayo, yogurt, herbs and spices together and stir through the pasta.
3. Add the chicken and bacon and stir until just combined.
The longer you leave this salad the better it gets, when you want to serve just plate up a pile of your favourite leaves, a few spoons of the pasta salad and optionally a couple of tablespoons of sweetcorn.
