Mushroom risotto

This comforting rice for 2 is so so easy to make and is extremely tasty. The video is already up on YouTube.

3/4 mug orzo or Risotto rice

1 1/2 mug beef stock with 3 dried mushrooms in.

1 large clove garlic

1 mug peas

1 large finely diced onion

2 finely diced bacon rashers (fat removed)

200g mixed mushrooms

2 tbsp yogurt and Parmesan (1 syn PER TBSP of Parmesan)

Generous pinch of salt pepper and fresh dill.

1. Fry the bacon, onion and mushrooms together until the mushrooms start to colour.

2. Add the garlic, stock and rice and a generous pinch of fresh dill salt and pepper.

3. Let simmer for 10 minutes, add the yogurt, peas and Parmesan, stir, turn off the heat and put the lid on letting it sit for a further 10 minutes.
