Before i started my weight loss journey i used to have the full fat version bought in store made with heavy mayo stuffed into a white roll. Not anymore! This is my zuked up version still totally delicious and easy to make! I really like this on a salad with a couple of medium boiled eggs or in a jacket potato with a side salad or in a wholemeal pitta.
This will easily serve 2-4 people
2 large chicken breasts (in small pieces and poached or cooked through and cooled)
2 finely sliced spring onion
1 heaped tbsp mild curry powder
1/2 tsp salt and black pepper
4 heaped tbsp greek yogurt (i use 0% fat really light and fluffy)
1 tbsp mayonnaise
1 tbsp mango chutney (alternatively you can add in some fresh mango chunks)
1 tbsp finely chopped coriander
- mix together the yogurt, mayonnaise,mango chutney,coriander curry powder and spring onion with the salt and pepper.
- The longer you leave the mix the better it will taste. Once your chicken is cool add it to the mix and you are ready to serve however you wish!
