Perfect poached eggs

I’ve had many disastrous eggs over the years.. But poached eggs are something I love and have braved many a time only to fail miserably and end up with a soggy mess. So here is my foolproof recipe. 

Fill a small pot with water and bring up to the heat until it starts to simmer.

When it simmers turn down the heat.

Crack an egg into a cup.

Gently pour the egg into the simmering water.

Now wait. Do not touch or be tempted to touch!

Wait until the egg whites are opaque and gently lift from the water, let it drain for a second and you are done!

No stirring no fiddling with vinegar. Easy and simple!
