Simple tomato soup

This is the most basic tomato soup recipe that can also be doubled up as a base of a sauce for pasta. Super simple and tasty, but for me i think the olive oil really boosts the dish to different levels!

1tbsp olive oil

2 tins tomatoes

500ml vegetable stock

1 garlic clove

1 finely diced red onion

1 grated carrot

(optional, small bunch basil finely chopped, add in when you fry the onion)

generous pinch salt and pepper

  1. Add the olive oil to a medium soup pot along with the onion and carrot.
  2. When the onion is soft add in the garlic and a generous pinch of salt and pepper.
  3. When the garlic is fragrant add in the tomatoes and stock and simmer for 15 minutes.
  4. You can leave chunky but personally i love blending mine with my immersion blender.

For a simple bolognese add in some Italian herbs and some fried mince or quorn straight into the sauce!
