Vegan Mayonnaise

Okay so it isn’t exactly like mayonnaise but is a really good alternative and brilliant as a vegan mayonnaise.

Basically when the chickpea water is agitated the proteins react and naturally thickens.

you will need

1 can drained chickpea water (you can use the chickpeas in a dish like curry or through a veggie rice)

1/2 tsp mustard powder, garlic granules

generous pinch salt and black pepper

  1. Blend together….

That’s it, I know so simple! Keep in a jar or pot in the fridge for up to 2 weeks.
