Cheese and onion pie

So it is meant to be pouring it down tomorrow so we made a last minute decision to do sausage ‘mash’ and beans for dinner. The mash being cheese and onion pie!

1kg peeled and chopped potatoes

1 large onion (finely diced)

1 large carrot (peeled and finely diced)

200g broccoli (into small florets)

50g reduced fat cheddar

1 clove garlic

1/2 tsp mustard powder

3 tbsp low fat yogurt

salt and pepper

  1. Boil the potatoes with the carrot and broccoli until they are starting to fall apart.
  2. While the potatoes are boiling, fry off the onion and garlic until they start to soften.
  3. Drain the potatoes and mix them well with half the cheese, the onion, mustard, salt, pepper and yogurt.
  4. put into an oven proof dish and top with the rest of the cheese and bake at 200 oC for 15 minutes.
