So it is meant to be pouring it down tomorrow so we made a last minute decision to do sausage ‘mash’ and beans for dinner. The mash being cheese and onion pie!
1kg peeled and chopped potatoes
1 large onion (finely diced)
1 large carrot (peeled and finely diced)
200g broccoli (into small florets)
50g reduced fat cheddar
1 clove garlic
1/2 tsp mustard powder
3 tbsp low fat yogurt
salt and pepper
- Boil the potatoes with the carrot and broccoli until they are starting to fall apart.
- While the potatoes are boiling, fry off the onion and garlic until they start to soften.
- Drain the potatoes and mix them well with half the cheese, the onion, mustard, salt, pepper and yogurt.
- put into an oven proof dish and top with the rest of the cheese and bake at 200 oC for 15 minutes.
