So this one has an unusual name as i worked on a recipe with my boyfriend whilst staying at his and it honestly works really well with pork, beef and even chicken breast. the pork and beef fall apart but are slow cook but the chicken is a quick cook but is truly just as delicious and moreish!
1 kg beef or pork or chicken breasts.
1 large onion finely diced.
300ml beef stock.
1 carton passatta.
3 tbsp smoked paprika and tomato puree.
1 tbsp garlic granules and mustard powder, Worcestershire sauce, balsamic vinegar, brown sugar.
1 tsp salt & black pepper.
- Fry off the onion and add to a slow cooker or casserole pot.
- mix the tomato puree with the paprika, garlic, mustard, Worcestershire sauce, balsamic vinegar, brown sugar, salt and pepper.
- Stab the meat all over and rub the mixture into the meat and let marinade for at least two hours then add into the slow cooker with the stock and passatta then add in the meat.
- Cook in high, covered, for a minimum of 4 hours or until the meat starts to fall apart. (chicken version underneath)
If using chicken then cut into slices and marinade with the tomato puree and all the herbs and spices and leave to marinade for at least 10 minutes. Fry the onion off, add the chicken and sear. Add the passatta and beef stock and cook until thickened.
